2019 Oakdene Yvette Vintage Sparkling

Appearance
Bright salmon tinge

Bouquet
Lively nose of citrus notes, white peach, honeysuckle and yeast driven aromas, leading to sauvory biscuity notes.

Palate
Delicate fine mousse, lifted mandarin rind and apple. Yeast developed texture and acid crunch, providing length and cleansing finish.

Fermentation
Fruit was harvested early to retain acidity and allow long term aging on yeast lees. The wine is a dry (or brut) style made from a blend of Pinot Noir and Chardonnay made in the “traditional method”, where the secondary ferment takes place in bottle. The wine is left to ferment and age on lees for 38 months before hand riddling, disgorging, corking and finished with a measured dosage (still wine and sugar addition) to balance the wine and fill out the palate.

Conclusion
A dry aperitif style, to be enjoyed now with or without food or over the next few years.

89 Points, Philip Rich, Halliday Wine Companion - 'This is 50/50% pinot noir/chardonnay. Aged for 36 months on lees and bottled with 3.5g/L dosage. With its bright but decidedly pale salmon pink colour, this looks like it could have been labelled rosé. The pinot comes through on the nose too with its aromas of red fruits, spice and baked goods. Palate-wise, it's got plenty of flavour before finishing crisp and dry'.

89 Points, Huon Hooke, The Real Review - 'Light salmon-pink rosé colour; pot-pourri/dried rose-petal and dried-herb, dried-strawberry aromas, the palate very dry and firm with abundant tannin grip augmenting the acidity, the two working together to add length and impact to the savoury flavours. A salty/saline effect lingers'.
